Orange, lactic, and bursting with apricot aroma, West Ashley is built for consideration and conversation. While Ashley starts as a simple saison, careful aging in Pinot Noir barrels with apricots, our house microbes, and warm encouragement transform her into a tart, complex, and delectable beer. To enjoy all that she offers, we encourage you to rouse the residual yeast, bacteria, and fruit into solution before serving West Ashley in your favorite stemmed glassware.

At Snallygaster 2022. Poured a dark apricot yellow-orange color with a small white head. Aroma was huge citrus, apricots. Flavor was light funky notes, touch acid but manageable. Woody vinous notes. Amazing.

Bottle shared at Prodigal Son Tokyo share. Thanks Jon! Pours a clearish gold with a full finger of white foam that lingers. Lovely apricot fruit and skin aromas on the nose with yeast, mineral and oak notes. Crisp and clean on the palate...easy drinking. Loads of apricot fruit, skin and stone on the palate. Refreshingly dry finish with more fruit and light mineral notes that linger. Elegant beer.
