Orange, lactic, and bursting with apricot aroma, West Ashley is built for consideration and conversation. While Ashley starts as a simple saison, careful aging in Pinot Noir barrels with apricots, our house microbes, and warm encouragement transform her into a tart, complex, and delectable beer. To enjoy all that she offers, we encourage you to rouse the residual yeast, bacteria, and fruit into solution before serving West Ashley in your favorite stemmed glassware.

Bottle shared at Prodigal Son Tokyo share. Thanks Jon! Pours a clearish gold with a full finger of white foam that lingers. Lovely apricot fruit and skin aromas on the nose with yeast, mineral and oak notes. Crisp and clean on the palate...easy drinking. Loads of apricot fruit, skin and stone on the palate. Refreshingly dry finish with more fruit and light mineral notes that linger. Elegant beer.

Bottle @ Dangerous Bottleshares 14. Pours hazy orange with a small fizzy white head. Aromas of stone fruits, brett, lactic tart, vinous funk, oaky. Taste has lots of stone fruits, dry vinous notes, pretty tart, bretty, juicy but very shortlasting, dry as fokkkk. Also has a slight grainy note to it.

Has a somewhat dullish colour, and a bit of haze, just a thin head. On the nose, lots of brett, big apricot, and the pinot shows through. Big apricots, moderate tartness, and a touch of malt, and a fair bit of barrel. Big, bold and delicious.

Bottle at the Santa Cruz Taproom. The new release. Lovely orange, very cloudy. Nose is wonderful apricots and some citrus fruit. flavor is simply lovely apricots as well, you can taste the fuzz and the stone too. Really unbelievable fruit flavor going on here. Citrusy, tart, but not full-on sour. Light bretty notes in the background. Simply lovely stuff. Reminded me of the unfiltered cask version of Fou'foune.
