Perfect Red King I a wheat beer with mixed culture and sumac I 5.4%
Perfect Red King, an alchemical term, refers to philosopher’s sulfur. The process for creating the perfect red king was long and arduous, requiring concentration and prayer.
Brewed sept’21 I bottled July’22
This is the latest iteration of the first beer I ever released as Wunderkammer. Stag horn sumac harvested from my property in craftsbury. This iteration has bright citrus acidity from the sumac. More so than previous releases. Also unlike previous releases all the sumac was added in the brewing, without any post-fermentation macerations with additional sumac.

500ml bottle. Opalescent, orange golden colour with average to huge, dense, firm, frothy, moderately lasting, minimally lacing, white head. Bretty, funky yeasty and minimally lactic, spicy, tangy aroma, wheaty malty background, hints of brine, whiffs of sumac, pomegranate, sauerkraut, Greek yoghurt. Taste is tart, bretty and funky yeasty, minimally lactic, minimally fruity and tangy, hints of brine, pomegranate, a touch of sumac, yoghurt, wheaty malty basis. Watery texture, minimally astringent palate, medium, scattered, mildly prickly carbonation. Rather monotonous - not overly impressive.

Bottle from Beerdome. Golden with a white head. Aroma is sweet, malty, citrus and acidic. Flavor is medium sweet and pretty acidic.

Bottle from Beerdome. Hazy golden with a white head. Aroma is sweet, malty, wheaty, citrus, brett and wood. Flavor is medium sweet and moderate acidic. Dry and moderate acidic finish. 140624

A golden ale with a thin lacing white head. In aroma, sweet fruity malt with brett, ground cherry, light lactic notes, very nice. In mouth, a nice sweet fruity Brett, light lactic notes, ground cherry, light lactic notes, very nice. Bottle at mondiale 2023.
