With the help of biomolecular archaeologist Dr. Patrick McGovern, we've re‐created another Ancient Ale, this time from the Nordic climes of Scandinavia.
The recipe for Kvasir was developed with the help of chemical, botanical and pollen evidence taken from a 3,500‐year‐old Danish drinking vessel. The vessel, made of birch bark, was found in the tomb of a leather‐clad woman Dr. Pat says was probably an upper-class dancer or priestess. The analysis pointed to the ingredients used in this unique brew: wheat, lingonberries, cranberries, myrica gale, yarrow, honey and birch syrup.
The base of Kvasir is a toasty red winter wheat, and the bog-grown berries deliver a pungent tartness. While a handful of hops is used, the earthy, bitter counterpunch to the sweet honey and birch syrup comes from the herbs.

Sample while checking out the expo at HomeBrewCon. Slightly hazy light copper color with a decent off white head. Tart berries light earthy herbal something to counter. Weird for sure but it kind of works.

bottle - Pours amber and smells mainly of tart cherries. I see it doesn’t have any cherries in it, but that’s what I thought of. It has a sweet, malty flavor with loads of tart berries. It’s medium to full bodied and the 10% abv is mostly hidden. Very enjoyable and interesting beer.

Pours a reddish brown from a bottle. Aroma of lingonberries (thanks IKEA) and cranberries. Flavor similar, becoming somewhat medicinally bitter, almost like a hint of Campari after the initial fruitiness. Very dry. Good beer.

Pours hazy orange with a off-white head. Aroma has notes of malt, caramel, dried fruits and alcohol. Taste is medium sweet and light bitter with a long warm, dried fruity and caramel finish. Body is full, texture is oily, carbonation is soft.

On tap at the brewpub. An unclear dark orange coloured beer with a small, off-white colored head. The aroma is sweetish, resiny and quite fruity, with alcohol and a faint herbal touch. It’s full bodied, warming and soft on the palate, with some alcohol flavors. Bready malts, fruityness and some sugar in the flavor, a nice herbal bitterness too. Lasting sweet, herbal finish. Well, decent indeed, but not my kind of beer. 150621

Sloe, concord grape. Cloudy copper, thin head. Vinous apricot, cranberries, grapes.Medium body, soft carbonation, warm. Surprisingly not a lot of nuance. Weird and very grapey, not bad.

Strange, as one would expect from something pulled out of a chemical sample of a clay pot from a few millennia back. Exotic berry aromas are big here, and honey and syrup add a viscous sweet and tangy element. Pours dark amber with decent head and lacing. Tangy finish. Tap at Right proper.

GABF 2014. Low cabonation and a nice palate, almost like a mead. I picked up the fruit but incorrectly perceived grapes; rather than the tart berries. Where I did pick up on those berries was in the mid tartness. I liked this beer, and I am always up for trying these historic beverages.

750 ml bottle. Dirty muddy brown color, thin head in a snifter. Aroma is cranberry, molasses, floral notes and spice, maybe sage? Or Rosemary.
Flavor is mostly cranberry notes throughout the sip with light wood, toasted grain and mild tartness from the berry. Mild spice not and the alcohol is well hidden. The overall feel is lke a wine spritzer or wine cooler. It doesn’t scream ancient or "gruit" in anyway shap or form. Nice to try once.
