Draught at the brewrey, 11/7/15.
Clear, brilliant copper-golden liquid shows plentiful carbonation creating a strong, white head.
Biscuits, pepper, dough and citrus in the nose all seem pretty on par for a Tripel with the alcohol being well concealed and no flaw noted. Some lighter hay notes, vanilla, honey and fairly reserved on the peach/banana thing that you so often get in large doses from brewpub tripels.
The flavor has lots of earthiness, dry, fruity, mildly bitter hops and grainy-to-doughy malts. A bit of alcohol mixes with the peppery phenols, loosening the body somewhat as the finish lends a mix of honey and citrus, with light carbonation and a fair amount of wateriness.
