Large white head that settles out at cover. Bright golden liquid is minimally hazy, leaving sediment behind.
Nice blend of lighthearted Belgian yeast esters and phenols as well as a good dose of brett character. Not too heavy on either one, especially the brett, with only tart, lime-like fruitiness, a trace of earthiness and light lilac-like perfume. No alcohol or flaws and the malt seems pretty nicely attenuated from the nose; with light honey and baguette-like notes.
Minimally sweet, but with enough maltiness to create a soft texture and light bits of pleasant honey and dough. Grassy, herbal and very floral hop notes add gentle bitterness as yellow fruit-like esters and bits of citrus-like acidity emanate from the various yeasts. Bright, light and enjoyable. And of course simple, as advertised, but appealing because of it, without the typical "We brewed this with 15 different yeast cultures, 8 strains of bacteria, 5 malts, 4 different experimental hops and aged it in 3 different types of barrels before macerating 3 different fruits in it".
