Big, white head atop a lightly hazy blond body slowly recedes to cover.
Dusty, cellar-like yeast notes are immediately apparent! Awesome. Black and white pepper phenols join in and are joined by lightly citric hops (lemon, soft orange) redolent of amarillo in their more reserved nature. Malts are well-attenuated, seemingly, providing only light dough, biscuits and a touch of honey. Reserved esters show none of the obnoxious/messy peach-banana and I’m very happy with what I have here. No alcohol or flaws.
Wonderfully yeasty in the flavor; plaster, dust, cellar, light acids and with pillowy malts that are very well-attenuated, providing a medium to medium-full body and honey and bread-like flavors. Good dose of fruity, moderately citric hops helps build complexity and add some bitterness but it’s nowhere near overdone. Really nice stuff and I love that they were able to get to the heart of the saison with the mild esters, plentiful phenols and a plastery, fresh yeast. Can’t wait to keep trying more stuff from these guys.
