The Michelin and Dabinett apple varieties are delivered into us in mid-October. Having been mechanically harvested they require a strong wash and vigilant sorting to ensure we secure a fresh juice of the best quality possible. We use a specific champagne yeast to ferment this juice with the aim of encouraging the best flavour characteristics to come to the fore during the fermentation process.

500 ml. bottle sampled as “Finnbarra Dry Irish Craft Cider” @ “Kaapse Brouwers 1st Anniversary Beer Festival”. Golden. Nose is quite sweet & basic apple. Tastes a bit chemical, sulfite, makes me think of artificial sweeteners, sweet. Dry, rather meh.

Bottle from O’Briens, Athlone [290514]
Golden, good colour, clear, thin white head
Aroma of soft apple core, slight sweet syrup
Taste of soft fairly sweet apple, simple apple flavours, slight hint of honey, slightly tannic
Palate - Soft carb, light to medium body, fairly sweet. Finish is quite dry, touch of apple skin in finish
Overall - Quite a decent cider but I prefer the other 2 Stonewell ciders
