We used our house cultures of yeast and bacteria to ferment a wild ale, brewed with water from a borehole beneath the brewery, malted barley and rye from Warminster Maltings (just under 20 miles away) and damsons picked from our landlords garden, directly behind the brewery.
The results are this tart and funky beer with flavourful damson taste and aroma.

Bottle ordered from Hoptimism. Aroma has sherbert and herbs. Low key vinous and funk. Clear copper gold. Bubbly white head soon almost entirely disappears. Sour. Tart. But juicy. Matches the aroma. Medium bodies. Slick. Verging on oily. Flat carbonation. Long dry astringent finish. Lovely sherberty stuff.

High tart and sour, but clean with a great world class profile. Light and refreshing but a fantastic sipping beer. Tilt birmingham

Bottle picked up from Beer Gonzo, Webshop, Earlsdon, Coventry and consumed at Campingplätz Ortherhof, be Ruhpolding, Southern Bavaria, Friday 24th January 2020. I was really hoping that this would be more like a Saison as indicated on the label. Peachy colour, hazy, no head. Quite zappy, a little herb but lots of Damson, it's a good beer, it's just I wanted a Saison and this isn't one. Fruity, dry.

On keg at the Hanging Bat. Appearance - amber orange with a very thin head that quickly dissipates. Light haze. Nose - lanolin and candied lemon. A weird combo. Taste - beyond saison sourness and again candied fruit and also some spice. Palate - tangy and very persistent. Close to medium bodied. Overall - a bit odd for a saison but good in its own way.
