Brewed with our friends Ile Sauvage Brewing Co., this golden sour base was fermented and conditioned entirely in oak barrels for 18 months, half fermented with a house culture from Ile Sauvage, half fermented with a house culture from House of Funk. Together, these beers screamed tropical, and were blended to further condition on the fermented peel and rind of pineapples, local honey and cinnamon as our take on the fermented beverage tepache.

A hazed blonde ale with a thin lacing white head. In aroma, sweet fruity malt with ground cherries, lactic acid, tequila, pleasant. In mouth, sweet fruity malt with light coconut, light tequila, Epsom salts, very nice. Can.

Poured from 473mL can. Hazy yellow gold with small white head. Pineapple dominates with a bit of wild yeast. Not much else. Simplistic, but decently tasty.

473mL can, pours a hazy pale golden with a small white head. Aroma certainly brings out the pineapple upfront, followed by murky wild yeast, and earthiness. Flavour is acidic and pineapple-forward, with a murky wild yeast profile that doesn't really sit right — it's just earthy and muddled. The pineapple and acidity dominate; there's no cinnamon detectable at all. Acidic and simple. Not impressive.
