Bavarian-Style Spelt Ale
Dinkel Hell is our spin on the weisse hell biers of Bavaria. Our take started with pale pilsner malt and a large portion of flaked wheat. We then added a generous amount of spelt malt. Hopped lightly with German Saphir, this pale spelt ale was then fermented very cold with our favorite hefeweizen yeast strain for a nice long maturation.

Aromas are somewhat similar to a not too fresh Bavarian hefeweizen. Flavors are similar to nose with another quality I can't place. Leans a bit sweet. Okay body and carbonation.

Don't know how these guys always get such a wonderfully funky, interesting yeast character to their beers, but even with (assumedly) a classic hefe yeast, it still smells of cellar funk, mineral and light earth, rather than a bunch of gross clove and bubble gum. The weisse yeast is there, of course, with mostly a peppery phenol and very light bubble gum on the end. Soft wheat/spelt keeps it from being too acidic or intense, it seems. Light honey and white bread, as well.
Fruity and wheaty with a soft blandness and lots of breadiness. Fairly prominent bubble gum and white pepper, though no harsh clove. A bit of a letdown from how noble the aroma seemed, but there's certainly nothing wrong/off/poorly-brewed here; it just feels very traditional hefe and thus quite unexciting. Not getting much deep texture or nuttiness from the spelt.

16oz can from Tavour. Hazy golden pour, fine, fizzy white head. Weizen yeast has its fingerprints all over this beer, starting with the aroma. Bananas, bubbles gum and clove. Taste comes in sweet, heavy weizen notes, bready, with a light spiciness at the finish Full, creamy mouthfeel.

16 oz can poured, picked up at Special Brews. A somewhat cloudy and pale golden appearance, with plenty of lasting foam head. Creamier body to this, and has lots of floral and wheat flavor. Very cool finish that borders minty. Aroma rides the pilsner malt almost completely. Really easy drinking hefe, and less of the over the top yeast characters I see in others. Tasty brew.
