Imperium is part of our Frigus project. Frigus barrels are selected and aged in our small barn. The barn is neither heated nor cooled and in the winter drops well below freezing exposing the beer to the natural fluctuations of our climate.Imperium is a wheat wine that was brewed specifically for this project and aged 1 1/2 years in red wine barrels from South Africa. Blend #1 (blended 12/16/15) – This version was aged for 1.5 years in red wine barrels from South Africa.

Auburn-magenta-tinted mahogany body shows light clarity and a dark beige head atop that shows moderate retention.
Red berries, tons of brett lambicus-like character, vanilla, soft oak and light chocolate all provide strong aromatics that are surprisingly balanced, though tend towards the tart/acidic fruity notes of the wild yeast/bacteria. Light acetic and lactic notes make their way in, as they usually do in barrel fermented beers while the strong wheat element keeps things from feeling sharp or aggressive. Alcohol is well-concealed and there are no flaws.
Surprisingly unlike the Singularis version, with a ton more acidity, including fruity, funky, horsey brett, moderate amounts of lactic acid and light acetic tones. Less chocolatey than the Singularis with a strong honey-caramel base that balances nicely and softens the texture in concert with the tight carbonation. Tons of fruity cherry and light vinous notes keep things very bright and soft wood tannins linger on the end with no alcohol or flaw.
