We reached batch 50! For this momentous occasion we decided to brew up something funky. We took a traditional German-style Berliner-Weisse and added a few twists. This beer was sour-mashed for over 48 hours to achieve a nice tart character. The hop addition of Cascade brings a nice floral character to the beer. We then fermented the batch on a blend of mango, pineapple and kiwi purée for a nice tropical character that we feel complements the tartness.

Moderately hazy, copper-golden body topped by a yellow-specked white head showing moderate retention for the style.
Big tropical juice flavors are amplified by the lactic acid behind them and really pour on the aroma. Strong, biscuity wheat is present, as are light honey and vanilla notes. They definitely packed a hell of a lot in to a 3.2% berliner and yet I don’t think it smells muddled/cluttered. Great complexity is created from all of the fruit acids, phenols and esters. No alcohol or flaw and the lactic acidity is nicely integrated.
Moderately tart fruit acids run alongside a chewy, soft wheat texture with spicy and sweet mango notes being perked up by juicy, bright pineapple, and lemon-yogurt acidity from the lactic acid. Moderate, engaging carbonation keeps it crisp on the finish even through the very big, chewy wheat. More light-hearted fruitiness and random tropical juiciness lingering on the finish.
