Fresh growler drunk 3/11/17.
Pours a mostly clear, auburn-chestnut color with a medium-sized, dark beige head that fizzles to a ring fairly readily.
Strong herbal notes in the nose give suggestions of both black licorice and thyme/sage notes. Behind it are moderate lactic acids as well as bready, medium malts showing brown bread character, light cereal notes and vanilla. Not too dry/tart despite the acidity, herbs and specialty malts; it still retains a good semblance of base malt brown sugar and caramel-like character for gentle balance, though it still tends to the dry and acidic. No alcohol or flaw.
Bready, with light caramel and dry toffee suggestions on top of sour lactic acids and earthy, spicy, herbal notes. Lots of fruity, poignant red berry, licorice and sage-like character. Low-to-moderate carbonation is natural and engaging with an oily-soft texture and very high attenuation. Not for the faint of heart, but delicious if you like sour gruits.
