Draught at the brewery, 2/16/17.
Sparkling blonde-golden body shows a gentle haze, to-style and a white head atop that is small but showing moderate retention.
Tart and juicy nose shows fresh lemon-pulp-like notes mixing with delicate honey and soft, creamy wheat-like notes. It comes together near-perfectly with not too much lactic acidity nor any harsh/heavy citrus. Dainty and well-balanced with a long mineral-heavy finish that also demonstrates a variety of fruity esters and peppery phenols. No alcohol or flaw.
Dry, champagne-like and with a wonderful wheat-heavy texture that adds just enough "chewiness" to give body and texture, balancing the acidity, without overdoing it. The beer remains sparklingly refreshing with zesty, moderately juicy lemon and tart lactic acidity. Fantastically clean, full of mineral and phenolic yeast notes with no alcohol or flaw. Juicy lemon and lactic acidity lingers gently. Wow, awesome.
