Bottle at EBF, 2/3/17.
Hazy pale beeswax golden with a small, but fairly well-retained, beige-flecked, off-white head.
Light acetic acid quickly gives way to moderate oak and tangy peach. Malts behind it provide honey and white bread while the apricots provide even more tartness and fruit character. Lactic acids are strong though there is no alcohol or surplus of toasty oak notes, thankfully.
Very fruity with lots of acidity coming at the palate from everywhere; fruit, barrel, bacteria. That being said, the fruit flavors are delightful here, as they almost always are from Proclamation; no skimping on that, that’s for sure. Honey, bread, oak, acetic-lactic sourness on the finish and moderate minerality from the stone fruit character. Maybe a little rough and young yet, but certainly still enjoyable and with tons of potential for aging.
