750mL bottle, drunk 8/31/16.
Good clarity, with just a light haziness, to this very pale, straw-golden beer with light carbonation creating a medium-sized, white head with moderate to low retention.
Super reserved, subtle nose has the expected lactic acid, though it’s not particularly big and tangy/tart. Lemon, wheat, biscuit, salt and/or other mineral is there, as well. I spent about an hour on this bottle, and I have to say, nothing really ever happened/evolved. By the end, it still smelled like light lactic acid, lemon and wheat.
In the mouth, it’s dry, lightly tart from the lactic acidity, with a strong lemony-citrus character and a very, very strong wheat texture and flavor that more than balances/soaks up the acidity. Fairly tight, natural carbonation and no alcohol or flaw. Simple, exceedingly so, which is fine, by why are they charging $14 a bottle for this stuff?
