Literally, a Sanctuary for the gluten-sensitive on our menu! This beer is our second gluten-reduced beer and continues to play with the connection between Somerville as a sanctuary city + the site of our locally-grown yeast cultivation program at AERONAUT labs. Released May 4, 2017

Light blonde, high clarity and a small, white head showing moderate retention.
Grassy hops are fairly scant but show little acidity, at least, as spicy phenols play against a softer, nuttier, cereal-tinged malt base that shows light notes of honey and vanilla. Low fruitiness for a saison, with light nectarine and apple-like esters. More apple as it warms and thankfully no bubble gum or banana, nor little, if any, clove. No alcohol or flaw.
Light spongecake-like malts provide dainty, if somewhat flabby, honey-like suggestions while a low but fairly engaging carbonation, in concert with gentle, grassy hop bitterness easily balances and crispens the finish. A bit too much cereal and nutty character for how light it is, but the gently acidic fruity esters and light pepper is enjoyable and the beer is wholly inoffensive and drinkable.
