Draft 1/15/19. Bright plum flesh, lightly-to-moderately hazy. Off-white head fades quickly to a ring. Strong mineral and funk ends on a very light but poignant tamarind-like acidity. Delicate plum is light but fragrant and well-attenuated and integrated. Nothing dominates, including the acidity. Juicy, tart, with peppery acid from the tamarind and almost floral-like plum that is both bright and juicy yet well-attenuated and soft on the finish. Cracker and biscuit provide structure in concert with tight carbonation. No alcohol or flaw. Restrained and flavorful.
