Vienna malt, local wheat and a dash of chocolate wheat malt create a smooth, pleasing bready backbone that partners with the complex esters and spice of our house saison yeast blend.

Draft at the brewery, 1/15/19. Lightly hazy, drab plum. Beige head fades quickly to light cover. Clove, apple and pear give a spicy, dry, estery start and there's little currant to be found. Cracker, biscuit and brown bread seem well-attenuated on the malt side and gently bolster the dryness of the yeast character. Clean and nothing crude, as the clove isn't overpowering, but I'm not getting tons of interesting character, really. Quite soft and malty and it's nice to see the base malt shine strongly leaving no astringent yeast phenol or husky, overly bready specialty malt. Still not getting currant, maybe just a slight burst of acidity up front. Toast, honey, moderately fruity esters and light clove give a fairly basic, sonewhat uninspiring saison impression. But the malts are nice even if the yeast character is rather blasé. Tight carbonation, no alcohol or flaw and good attenuation. Nice red fruit character lingering.
