A one and two year old golden sour blend fermented and aged in oak. In August 2021 we blended these select barrels into a stainless tank onto whole fresh crushed peaches where it fermented slowly for the next six months. Brewed with a blend of Pilsen malts from Vermont Malthouse and Valley Malt. Raw wheat from Nitty Gritty Grain Company and North East Kingdom Grains. Conditioned naturally in the bottle early 2022 with raw Vermont wildflower honey

Bottle, courtesy of Miro B. Shared with him and Eric at Cellar above ground .Hazy yellow, small white head. Lots of horse blanket, apples, peaches, bit citric, juicy. Medium+ sourness. Loved it.

Draught at Foam, 4/7/22. Mildly cloudy, pale lemon-golden. Off-white head slowly fades to ring. Strong peach mixing with lactic acidity, all smelling well-aged/even. Gentle oak, biscuit, cracker and leather peach tannin with no alcohol or flaw. Bright, clean, beautifully/authentically fruited. Like biting in to a peach, though it dries out quickly and fully, with lactic and peach acids lingering tartly and juicily. Soft, malty, well-attenuated and clean with bright, but not overdone acidity. This is phenomenal.
