Named after distinct pasture grasses and forbs that can be found scattered throughout the fields of the Trillium Farm in North Stonington, CT, The Pasture Series is a collection of mid-strength, mixed fermentation beer that utilizes distinct ingredients and processes, resulting in standalone expressions that we're excited to share with you.
An American Wild Ale brewed with spelt and rye, fermented with our New England native mixed culture, and aged in oak upon beautiful selection of herbs, Henbit presents a slightly hazy orange color in the glass. The aroma awakens the palate with its vibrant bouquet, which offers notes of lemongrass, sage, lightly-toasted coriander seed, oak, and underlying subtle rye spice. With a light-to-moderate acidity, Henbit is gentle, finishing with a touch of sweetness and remaining incredibly drinkable for 8.0%.

11.2 oz. bottle, pours a clear bright golden with a medium white head. Aroma has a wonderful wild yeast character, with an almost vinous quality, oak, and rustic character. Flavour is super bright, with extremely complex wild yeast, light white wine character, oak, and rustic notes. Extremely aggressive carb which works perfectly. Wonderfully constructed.

12 ounce bottle from Libby’s Liquors. Orange gold pour. Puffy white head. Streaky lacing. Funky acetic aroma hints at Brett and earthy grains. Tangy barnyard flavors upfront. Subtle Brett notes, fresh hay, lemongrass, grape must, oak, rye malt, bay leaf, coriander and zesty carbonation.

Pours slightly hazed gold into a tulip. Bright white head with little retention recedes to hug rim. Sour citrus funk aromas. Medium bodied with sweet meadow, mildly tart lemon and meringue upfront turning to earthy peel and pith in the dry, medium length finish.

Clear, pale, lemon-golden. Large white head slowly falls to cover.
Love the henbit character in the nose. Of the three of these first prairie series, this seems to have the most adjunct character and I don't think it's overpowering at all. It also seems to have by far the least acetic acid in the nose and light honey-like malt comes through alongside softer Brett character. Good and balanced, and the most mild/soft despite also being the highest abv of the 3.
Plentiful mint in the mouth and only a fleeting amount of acetic acid. This is delightful and malty with good attenuation and no alcohol or punchy acids. Playful brett, wood tannin and engaging carbonation. Would drink this one again, happily. The other two, not so much.
