Freshly canned, drunk 7/14/21. Soft-toned, honey-to-maize with a dense, large, white head showing good retention. Good clarity. Very mild, fruity nose shows no trace of any aggressive or overly spicy phenols (clove, ginger, heavy pepper). There's a Dupont-like white pepper with light lemon character and deep, honey-tinged malts with strong mineral-like character and herbal/floral hops. Gets fruitier as it warms, in part due to some Brett notes, with the balance remaining exquisite and no sign of alcohol or flaw. Soft, richly malty but with excellent attenuation. Nectarine, apricot and green pear-like fruitiness abounds with soft honey, tons of minerality and mild Brett acidity. Herbal and earthy hops add minimal bitterness and complement the flavors, building complexity while carbonation is tight and the texture is soft and engaging. Excellent, excellent stuff. Really nice show of the Brett which is mild and in the background.
