Bottle drunk 6/25/21.
Clear, lemon-to-golden with a small, white head showing medium-to-low retention.
Some light pineapple and vanilla in the nose, but as expected from these guys, it's not even close to overdone. Light honey and/or white bread in the nose from the malt easily balances the phenolic acidity. Probably a low-adjunct gin or a G2+ barrel because I don't think I get any gin character, which is fine. Tons of minerality, light doughiness and soft fruitiness lingering with no alcohol or flaw noted.
Soft and understated in the mouth, yet with a growing richness/strength from alcohol and malt. Biscuit, dough, cracker and light honey are all here and the adjuncts are still quite restrained. Some warming on the finish with a full body and low ester/phenol character. Fruity finish with light alcohol and richly layered malt notes. Definitely an intense beer, despite its seemingly restrained flavor profile. You feel its intensity after drinking it for a while.
