Our 4th release of Parfait is the first version of this beer in which 100% of the beer touched oak. Being a Parfait, it still showcases the blending of young and old and contains 55.5% of Barrel-Aged Stout (Vibes and S'more Vibes recipes aged in Rye and Bourbon barrels for 7 to 44 months) with 44.5% of Parfait being Vibes aged in Missouri Oak for 4 to 9 months. We then finished this blend on Hazelnuts, Hazelnut Coffee, Cocoa-dusted Coconut, Flaked Coconut, and Vanilla Beans. True to our nature, with this decadent list of additions, we still managed to find a balance in the adjuncts while still allowing the barrel and the oak to shine.

Can at SP Cellar. Pours black with small tan head. The aroma is strong hazelnut, chocolate, toasted coconut, bourbon, vanilla, roast. Slick body, hazelnut, milk chocolate, roast, bourbon, vanilla, coconut, nice sweetness, enjoyed this.

SP Brewery draught, 12/26/22. I think it's clear. Dark mahogany-dark amber. Thin ring of bubbles on the edge. Woah coconut!! Smells pretty fruity, authentic and bright without any twangy acidity. Does dominate though...don't get the hazelnut or much if any vanilla. Still, this is clean, malty, not boozey or sugary. Sweet, malty, good acidity blending with lightly earthy, toasty hazelnut and spicy cocoa. Coconut is big and bold. This is a coconut beer through and through but it's about as good as I can imagine the coconut being. Fresh, fruity, juicy, soft. Quite malty and sweet with a bit of crunchy hazelnut on the end. Wish it was a little less sweet, coconutty and with a bit more barrel character, but still a solid effort.
