Our yeast takes advantage of these processes, and creates flavors through magic and illusion (well, science, really).

Pours deep chestnut into a weizen glass. Tan head with good retention recedes to skim surface. Dark caramel, bananas flambe and clove aromas. Sweet and dry with overripe banana, clove and treacle front to back. Medium length bananas flambe finish.

Brighton draught, 8/19/22. Clear, medium-amber. Large, butter/off-white head, moderate-to-strong retention. Classic banana-clove isn't overpowering but prominent. Richly-malted with a light fruitiness and long honey. Clean. Soft, very malty with sweet dough, bubble gum, ripe banana and lingering drier grain and light phenolic spice. Not overdone on banana or clove and though it's on the sweeter side, I actually prefer that to bone dry and overly spicy/astringent.
