Living wine, with Vermont Terroir across the board. This beautiful and easygoing apple/grape wine combines wild foraged apples and northern red grape pomace and clusters. AGED FOR 2 YEARS and then apple juice added at bottling for secondary fermentation and bubble.

750mL bottle at FOAM, 8/13/22. Royal purple, light haze, moderate sediment As Betula and Elder Dandy are complete mindfucks of complex craziness, this is simple, straightforward and thoughtless enjoyment. Bright berry and moderately sweet apple with low grape acidity and a tannic structure. Juicy, bright, balanced, clean.

750mL bottle, pours a hazy amber orange with a small beige head. Aroma exudes some wonderful funk, with barnyard funk, crisp apples, and champagne effervescence. Flavour is along the same lines, with heaps of barnyard funk and musty champagne. Highly carbonated and complex. Lovely.
