Missouri Wild Ale with Illinois Quince

As with Satsuma and Yuzu, we used a very delicate base to allow this extremely aromatic fruit to shine. Quince started as a Lagerbier, similar to the base of Sunsets, which we then finished in oak with our Side Project mixed culture. Once mature, we allowed it to re-ferment on Illinois-grown Quince (sourced by LC member Will Bresnahan!) from the 2020 and 2021 harvests. This beer started life in 2020 and then became a blend of both harvests providing the depth and complexity only found with time from the older thread and then the explosive green apple jolly rancher and vibrant aromatics from the youthful fruit expression of the younger thread.

375mL bottle, blend 1, drunk 6/19/23. Clear brassy-golden. Quickly fizzling, white head. Wow that's an absolutely stunning expression of the fruit. Juicy and inviting, yet tart and balanced with acid. Much like the beer, with rustic grains providing hints of honey and biscuit, as well as well-developed/expressed Brett fruitiness and tartness. Hint of mineral, funk and oak on the clean, alcohol-free finish. In the mouth there's just a pinch of acetic character up front before the fruit and Brett take over in an extremely flavorful combination of tart, fruity, juicy notes that are balanced by sumptuous malts and oak tannin. No toast, no heavy acetic. Juicy as all hell with a bit of butter and highly engaging tartness. Didn't realize quince could be so juicy and fruity. Love it.

Bottle. Pours a hazy gold with small white head that lasts. The aroma is strong apple, grape skin, citrus. Slick body, tart apple, pear, grape, light acidity, refreshing, enjoyed this.
