Alongside Epilogue, we have another new offering that might be our most unique beer to date. Bespoke took an unlikely, meandering path that lead to a place that’s better than we could have imagined when we set about creating a farmhouse ale inspired by our favorite cocktails. The base from which it started was a Bière de Garde fermented with our house mixed culture. After some time in one of our oak foeders, it was transferred into bourbon barrels just emptied of Echos our Baltic Porter - except we deliberately left a small portion of Echos in each barrel to add to the blend. After many months, those barrels were once again racked into the following: a freshly-emptied bourbon barrel, a lovely cherry brandy barrel and (finally) an incredibly aromatic Amaro barrel. Those contents were reunited months later in one of our blending tanks, infused with sweet and bitter orange peel and, for good measure, Luxardo cherries. Bespoke took a wild journey and we doubt we could precisely re-trace its path - each step was taken with care and intent but, in a way, Bespoke is an improvisation of a beer. We could throw some descriptors you way but we’ve been wordy enough as it is. It’s truly unlike anything we’ve made and we suggest you experience it yourself!

Row 34 draught, 5/16/23. Clear dark mahogany. Tan head slowly to cover. Alright, that's gonna work out nicely. Yeah, some Amaro, some bourbon, some porter, some Belgian and wild yeast. Some a lot of things....yet it's not crowded. Prune, raisin, cherry, vanilla is prominent. Definitely light acetic, not unwelcome as it balances the dark malt notes. Clean, clear, complex, interesting. Soft malty, acidic with prominent acetic and lactic notes yet with big cherry, caramel, Amaro and soft, supple malt textures. Excellent barrel character traceability. Can really follow what they said they did here.
