Weissbier (aka Hefeweizen or Weizenbier) was an early love for many of us but it’s a deceivingly simple style that demands great attention to detail and technical precision. There’s a reason many of the great German examples are made by breweries that specialize in wheat beer almost exclusively. Weissbier leaves little room for error but when one hits the mark it’s an intensely flavor and uniquely refreshing joy. Utilizing a mash of 65% German wheat and 35% malted barley, we employ a mash regiment designed to coax added layers of spice (think clove). Fermented low and slow with a classic strain, those characteristic banana notes are present but kept in check. Assertive carbonation and pillowy foam bring things together in a beautiful way - enjoying one of these is like catching up with an old friend!

Undated can (older, but fridge stored), drunk 5/7/23. Cloudy bright peach-golden. White head is medium-sized, shows pretty good retention. Nose is classic banana, white bread, honey and a bit of peachy-citrus. Not too heavy on the bubblegum or clove, thankfully. Soft, malty and with a chewy wheat character featuring good amounts of soft fruit esters including peach and mild lemon. Bright and snappy, good attenuation, low bubb gum, low clove.
