Double Willet Barrel-Aged Imperial Stout finished on Sump coffee made exclusively for Side Project and Canadian maple syrup. "Shin Shin" - a Japanese word for snow falling. Released on 2/14/2023 during Side Project's 10th Anniversary Stout Week. Draught only.

Draught at Cellar, 3/28/23. Dark, undetermined clarity. Burnt sienna head to ring immediately. Coffee and Willett vie for prominence in the nose. That Willett is something. Soft, luxurious, mild, but lovely. Rich malts add caramel and light chocolate. Coffee is tasteful though I'm still wondering if I just want the Willett and malt all to myself. Espresso-like with ash and rich bitterness. Clean, no booze whatsoever. Soft, rich, silky with a moderate, pleasing viscosity. Fair amount of coffee bitterness with moderate alcohol warmth and light sharpness on the finish. Rich, quite sweet though with plentiful roast, barrel and coffee to balance. Tingly Willett notes are dainty and lightly spicy. I'm getting a touch of alcohol in the nose, with breathing. Not as much coffee in flavor as the nose would suggest, which is nice. The stout and the barrel are certainly extraordinary here, but there is alcohol and bitter roast here that I don't love. It's pushing it on the sweetness, though it's enjoyable as the malt flavor is so good.

On tap at the brewery. 2023 vintage. Black with brownish head. Great intensive coffee, dark chocolate, some maple, more coffee, super smooth. Medium sweetness, nice roasty bitterness. Full bodied. Great, as good as coffee stouts get.

On tap at The Cellar. Pours black with small tan head that lasts. The aroma is intense maple, roast, chocolate, bourbon, wood. Slick body, maple, milk chocolate, roasted malt, bourbon, enjoyed this.
