375mL bottle, undated, drunk 1/28/23. Clear blonde-hay. Large, well-retained, white head. Crisp, fresh, varied, rustic grain with a smattering of herbal and fresh grass-like hops. But the yeast, as it should, steals the show and is quite jaw-dropping here. Hints of black pepper, touch of tartness suggested, no citrus, low fruitiness even, with plastery-mineral character. A bit difficult to describe, as saisons usually are, but this shows nothing crude. No lemon-lime, no white pepper, clove, banana, bubble gum. Clean, no alcohol noted. Soft, malty, incredibly flavorful and well-textured for its size with tight carbonation and rustic grain character. Just enough hop bitterness but it doesnt distract from the beautiful saison yeasts here. Would be curious to know what its a mix of, but it doesnt matter. Big plaster, mineral, just an ever so slight hint of tartness. Black pepper is soft with light apricot and peach skin. Best saison I've had in a long while.
