Sour tripel ale with Roussanne grapes aged in bourbon barrels
Part science, part art, Elevage pays homage to the elevation of fermentation through process of, barrel-aging, blending and ultimately crafting this ale to taste. This collaborative effort with Sans Liege blends our barrel-aged tripel with super sweet late harvest Roussanne grapes which was then reracked into bourbon barrels. The result is a highly viscous, sweet ale with hints of creme brulee, honeysuckle, mandarin orange, and honeyed apricot.

Very interesting stuff. Drinks like a dessert wine, very thick, pretty boozy. Sweet with some sourness hiding in it, tons of wood, vinous grapes, and a healthy dose of bourbon. If tripels were all like this, I'd like more of them.
