A classic British-style cask IPA created using the very best ingredients we can get our hands on and then fermenting it in our new Union set. For our base malt, we have used Maris Otter from Norfolk, a touch of Simpsons' best Crystal malt to add a touch of colour and rounded sweetness and some of the special (and expensive) Brewers' Invert No.2 sugar from Ragus, which will add notes of caramel and toffee while helping to keep the beer's body in check. The all-important hops are British-grown Goldings and Northdown, which give us some gentle berry flavours and rounded, ceder-like hop aromas to balance the maltiness.

Cask at the Southampton Arms, London on 28th August 2024. Clear amber with shallow whitish foam and full lacing. Caramel malt aroma. Spiced maltiness and zesty peel in-mouth. Biscuit malt finish with hints of citrus zest. Full bodied with a smooth mouthfeel.

Cask at Hops, Crewe. Pours a cloudy golden amber with a large almost white head and good lacing. Hops are the mainstay of the aroma, plus traces of tropical fruits and yeast. In the mouth it starts off slightly bitter with a creamy texture and full bodied. But the bitterness gradually increases to become dominant Flavour of oranges and traditional hops with peeks of alcoholic strength. Later on there are traces of marmalade and treacle too leading to a finish which is quite bitter and slightly sticky. This is rather nice – and dangerously drinkable !

Cask. Hallamshire House Sheffield. Soft haze on a pale to medium orange gold. Fully lacing lasting sparkler induced wonder of a swede. Looks belting. Much like the Jaipur Union this is very yeast forward. Sweet bready malts. Spicy peppery herbal hoppage. It’s out of the ordinary for sure. Taste has the bready sweet malts up front with a decent hit of peppery herbal bitterness. Lots of body here. Feels like a cask that has just been tapped (which it has) with that fine brisk carbonation and a bit of a “green” character running through. Bittersweet finish leans toward the peppery herbal hop side. Good. Bit odd. This Burton Union kit has produced two very interesting brews so far. Will look forward to the next
