Life Cycle; balsam fir and mixed culture beer. 5.2% abv, brewed Dec. 2021/bottled July 2022
Yes, this beer started as a Christmas tree. Cut from our property, conditioned a couple weeks in our living room, then chopped into branches and chilled with a wheat based wort in the coolship. After six months in puncheon, I combined it with fresh fir tips that spring, and bottled it a month later. My goal was to sell it that December, but it was too incandescent! Almost like chewing on a lightbulb and inhaling the phosphorus. It needed time to harmonize and mellow out. A year later, this beer has reached a nice balance. The fir character is really intense still, but is much more integrated and at peace. I hope you all find brightness and peace too. This is the last Wunderkammer release this year and I want to thank you all for the support this year. With love and best wishes for 2024!

500mL bottled July 2022. Drunk 11/25/23. Clear, straw blonde. White head steadily to ring. Well that's a nose. That is probably the purest expression of fir tips I'll ever smell in a beer. Good mixed culture character, dare I say some fermented balsam? It's powerful, clear and beautifully done. Flavor is well integrated balsam with a strong maltiness and good attenuation. Minty almost with earth, biscuit, light honey. Mellow lactic acidity. Just impeccable. Balanced.
