Brewed at our small rural brew house in a wood fired copper kettle. The wort was moved to our aging cave and fermented with mixed culture in stainless, then aged in puncheon and bottle conditioned. Mushrooms provided by Wild Branch Valley Farm in Craftsbury.

500mL bottle Jan 2022, drunk 10/8/23. Clear peachy-copper. Gushing bottle produces a large, beige head. Smokey Brett! Medicinal in a good way. Almost iodine-like. Cherry, earth, heavy mineral. Very interesting and lovely. Iodine, band aid, rich peat and prune-laced cherry. Light vanilla, rustic grains. Lighter bodied, though I wouldn't call it thin. Such awesome combination of Brett and smoke. Lingering cherry, honey and more grain.
