Made with custom, Maple smoked wheat from Thrall Family Malt (Windsor, CT) and Marynka and Lubelski hops from Poland. Effervescent, refreshing and full of flavor we’re excited to share this take on Polish Champagne.

Can thanks to Jack! Pours a clear very pale straw yellow with a white head that dissipates nearly completely. Aroma has a combination of straw and light smoke with some hay and light grains backing. Flavor has a nice wooden smoke through the beer with some light sweet grains and a bit of straw underlying.

Brewery draught, 9/15/23. Bright, sparkling, highly effervescent, clear blonde-lemon-golden. Massive, well-retained, white head. More smoke in the nose than expected but lower salinity or nutty/biscuity wheat. Almost schlenkerla helles-like. Light lemon-like acidity on the finish. Clean. In the mouth there's significantly less smoke, replaced by a bright, lemon-like acidity that mixes with the angel food cake-like malt character to give an almost lemon merengue character. Ample texture, moderate attenuation. Maybe a bit more lemony than I'd prefer with more malt sweetness instead of more dry, nutty wheat.
