Foster Hill (1904 - 1919) was Edward's brother; Hill Farmstead Brewery rests upon the land that was once home to him and his 13 siblings. In its previous incarnation, we had honored him in a different manner, one that was limited by its infrequency; we hope to reinvigorate his memory by adapting his namesake beer to an American IPA—brewed with Citra® and Simcoe® hops.

Pours a hazy yellow colour and a frothy white head with little retention. Aroma's: piney, resin, citrus. Retronasal it's citrus juicy, a bit dank, resinous bitter. Flavour is moderate bitter with a hint of malty sweetness. Medium bodied. Long bitter finish. Old school and very nice.

Brewery draught, 9/13/23. Moderately-to-heavily hazy, pale golden with a hint of deeper maize. Fluffy, white head slowly recedes to spotty cover. Big juiciness with strong white bread-like malt and signature woody pine from the simcoe. But Hill does it well and there's no resin whatsoever. Lemon, tangerine, light mango. Clean, very fruity yeast. Soft, juicy, assertively bitter and maybe a hint soapy, but the soft malt helps mitigate. Low malt flavor but still ample, medium body. Strong lemon and floral notes. The slightly soapy bitterness is annoying but this is otherwise fantastic. The nose is killer and full of mineral and light sulfur. Even despite that soapiness, it's still better than most IPAs out there.
