I am so pleased to present Dagger! This cider is a delightful 3-way union, fermented separately and blended before bottling. First, wild apples foraged in part by Dagger dog’s human, Edgar @edgrrevenkeel Second, a christmas pressing of late herilooms from the Apple Farm in Fairfield. Third, a wild apple skin-contact ferment with lots of local honey.
It goes at 11% ABV and drinks like a cava.
The brilliant artwork is by Clara Kazarov @useful_filth Clara is an artist who, among other things, has worked with Bread and Puppet in Vermont, and has used her art to fund aid efforts in Gaza. She’s also a fearless paddler.
I will be donating 10% of Dagger’s sales to Palestinian relief charities, such as @unrwa and @thepcrf

187 mL bottle, 2021, drunk 9/4/23. Is...is this a lambic?? Lactic, vegetal, pepper, heavy mineral. Salinity and light honey with a bit of watermelon juice? Stunning, just stunning. Sweet apple sugars with pepper, flesh, star fruit, watermelon and more rich honey lingering alongside peppery notes. Champagne-like carbonation propels vanilla, apple skin, light autolysis and heavy mineral with a touch of alcohol. Just mind-blowing stuff. A cider, but doesn't even taste like a cider in a lot of ways.
