Classic Bavarian wheat beer brewed with German wheat hopped with Spalt Select, and open fermented with a classic yeast from a Munich monastery brewery. A single decocted mash produces a balance of clove & banana.

Brighton draught, 8/4/23. Cloudy bronze, white head quickly to light cover. Mostly pepper, light clove and smoked band a in the nose. Dry, with nutty wheat. Clean. Soft, well-carbonated with excellent maltiness and good attenuation. Good acidity on the finish. Clean with the esters and phenols you want and none of the crap.

Can at home. Just called Hefe now. Cloudy burnt yellow. Not that fluffy a head. Nose and tastes of banana, cloves, wheat, pepper. Fine mouthfeel and palate.

2022 edition 5.2% Pours cloudy gold into a hefe. Bright white head with medium retention recedes to nothing. Banana and clove aromas. Soft with earthy, overripe banana and clove front to back turning to mildly tart citrus before the dry, earthy finish.
