Corot Noir, like its name sake Pinot, is capable of making wonderfully balanced deep red wines with bright fruit character. Once again, we worked with our family at Blue Heron Vineyard in South Windsor to select the variety and target the ideal picking window for our use. A carefully assembled multi-year blend of spontaneous beer was transferred onto the fruit just after harvest in September 2021 and given time for a complete refermentation. We then transferred the beer back to a 750L oak cask to rest for another 5 months before bottling on March 22, 2022.

750mL bottled 3/22/22, drunk 6/23/23. Clear, deep purple-violet-raspberry. Large, pink head, modest retention. Big bursts of juicy grape acids and chalk with huge minerality and a healthy mix of lactic/acetic/brett. Clean, funky, lambic-like with a massive aroma. In the mouth it's spicy with black pepper-like notes as well as chalk and juicy acidity from the grapes. Low oak, soft malt and wheat with good attenuation. Quite sour, but not too much so, with only a bit of acetic and tons of lactic acidity.
