In 2008 I had the good fortune of visiting Belgium with two of my brothers. For over 10 years, I held on to bottles of the most choice beers that we sampled during our visit. In 2019, we got together, drank the beer, and used the cultures from these bottles to inoculate a barrel of Wild Child.

After years of additional conditioning, this barrel was deemed so perfect that we bottled our very first Grand Cru with its contents. You are holding in your hand a truly unique beer that will never be replicated again.

375mL bottle at the brewery. Clear brass-bronze-golden. Small, white head steadily to partial cover. Yeah, that does smell pretty sublime. A far cry from the super-acidic Wild Childs they have in bottles. A nice blend of assertive, moderately buttery oak, strong, cherry-like Brett and moderate, mellow lactic character. Nice rich maltiness with honey and light graham cracker-like notes. No booze, low acetic. Buttery oak, moderate, but mellowed acetic and strong but fairly mellow lactic acidity. Big malts with rich, buttery oak. Reminds me of a California Chardonnay, but a high quality one. Definitely a step up from the current wild child's, but still wouldn't hate if they dialed back that acetic character.
