Mixed Culture Foeder Saison brewed with 1886 New York Pilsner malt, oats, wheat and rye; hopped with Saaz and NY-grown Crystal.

Fermented slowly with our house saison yeast blend and matured in one of our American Oak Foeders for several months before being transferred to stainless for another 4 weeks of conditioning.

We’re tasting - cold blueberry skins sweating in the sun, peach-heavy fruit cups, the zest of one or two lemons, fresh hay funk and ritzy hotel lobby cucumber-lime water.

Draught at Tørst. Funky earthy sour foeder, lemon pepper, light citrus and floral. Pretty good.

Undated can drunk 6/4/24. Rapidly fizzling white head. Clear lemon-brass. Pretty nice, mellow mixed culture with gentle, fruity brett and lightly tart lactic acidity. Hint of oak, biscuit and honey with a clean finish. The saison character is still retained, albeit lessened, of course. Stone fruit, white grape, hint of pepper. In the mouth it's extremely fruity with apple, pear, peach, gooseberry....very light oak, very light malt. Not thin. Maybe a bit more fresh oak, though it's not tannic, than I'd prefer. Lots of gooseberry, light vanilla, maybe a bit of powdered sugar. Did not find the asscrack that PhillyBeer mentions.

Yeah about the same. Everything works except there's a strong powdered sugar element throughout. Possibly light vegetal notes, and a bit more raw oak tannin than is needed.

Pint can - turbid gold - a subtle funky mixture of peach skin, light white grape sweetness, light funk, very mild acetobacter acidity, light phenolic peppery character - finish of melon, oak, peach, light buggy funk - I dig it:

16 oz can from the brewery, 8/14/21. Mostly clear golden color, thin white head. Super funky, wood, and earth. Just a ton of flavor packed into this 4.2% beer. This is a really nice one.

Can from St Gambrinus: pours gold with small white head. Aroma is some wood, saison yeast, light funkiness. Taste is lightly fruity, cork, wood, slightly sweet. I like the direction but this does not seem to hit the mark.
