375mL bottle pour at Woodstock, 12/15/24. Clear, bright, pale golden. Nose is crazy intense and interesting. Massive sassafras with juicy apple, vanilla-forward oak and low lactic acidity. Soft, juicy, spritzy. Some earthy sorghum, gently sweet with soft apple juiciness and bold sassafras spice. It's, perhaps, a bit heavy-handed on the sassafras, but I absolutely love the flavor and it compliments the apple and oak well. Chewy texture via barrel tannin and sorghum. Lower acidity from fermentation.
