Our big imperial stout was barrel aged in blueberry mead (from The Colony in Tyngsboro) ex. Four Roses Bourbon barrel for 6 months and then blended with the rest of the batch, tank aged. This created a beautiful jet black, smooth stout with a dark tan head. Aromas of caramel, honey, dark fruits, and roast. Warm roasty chocolate and coffee notes mingled with caramel and dark fruit flavors. Finished smooth with a warming effect from the alcohol.

5oz draught at the brewery, 11/17/24. Clear, not pitch black. Small, light tan head quickly to ring. Comforting bourbon spice and rich, caramel and chocolate-toned malts with no booze. Lots of spicy bourbon with low oak/low tannin. Chewy texture, not thick or syrupy, high attenuation. Not thin, but a more medium body. No overt booze, though some warming in the finish alongside the heavily spicy bourbon. That's some excellent barrel character, really adds a lot of flavor and complexity. Balanced and interesting. Definitely some blueberry spice/skin and mead phenolics.
