Bière de Coupage is our collaboration with our friends from Garage Project in Wellington, New Zealand. A beautiful 2 year old puncheon of Oude Fermier was selected and then blended with some young Missouri Saison to create this Bière de Coupage before dry-hopping it with New Zealand Nelson Sauvin hops from Freestyle Hops. The blend was then naturally conditioned in this bottle for several months before sharing it with you.

750mL bottle, blend #1, drunk 11/3/24. Unfiltered, bright golden-brass with copper tints. Large, semi-creamy, white head, good retention. Good mix of actual saison character (not cheap, Americanized clove-bubble gum crap) and moderate lactic acidity. Some mild, fruity Brett in there with a solid backing of biscuit and honey-like malt character. Oak is gentle, aromatic, but not too buttery or tannic. Fruity, malty, great balance. Neither too dry nor too acidic with tons of fruit and an undercurrent of strong lactic acidity and oak, yet neither ever become too prominent. Even some gently bitter, fruity, herbal hops remain, joining the peppery, fruity Sacch on the finish. Playful, round, juicy, elegant, intensely flavorful. Man, when SP's saisons are on, they are ON.

On tap at the brewery. Pours a hazy copper gold with small white head that lasts. The aroma is oak, leather, yeast, funk. Thin body, apple skin, wood, leather, nice tartness, enjoyed this.
