As the embers burned, and haze filled the air, we sat around the bonfire after a mousing session on the Manistee. Reminiscing of good times and more to come, a traditional saison came to mind. Brewed with pilsner, unmalted wheat, rye, spelt, and chit; we utilized a step mash for body and accentuation of flavors with the interplay with the yeast. Hopped so gently in the kettle with three year aged Michigan grown Mittelfrüh from 45th Parallel Hops. Notes of fresh peeled oranges, fluffy wheat fields, and hints of spice. Brewed in collaboration with Silver Spruce Brewing.

500mL bottle, undated, drunk 10/25/24. Moderate gusher, though I poured it quickly and still got food clarity. Peachy-brass. Giant, white head. Nose shows lots of white pepper, some hints of banana and citrus. No big clove or bubble gum. Not exactly a Dupont/blaugies character, but far from a crude, American example. Malty, well-attenuated, though it feels like it may have been a bit sweet before this secondary refermentation (bottle was from warm shelf, too, and may have sat for a while). But all-in-all, lots of interesting grain, peppery, fruity yeast and a good texture.
