Containing apples grown at Tree House Farm & Fermentory, À Travers La Mer is then conditioned in tawny port barrels with a pitch of Brett Lambicus. The resulting cider is deeply complex with notes of hay, red wine, funk and crisp apples. Enjoy this with a sharp cheddar and enjoy cider bliss. This version is with gooseberries.

Bottle pour at Woodstock, 8/15/24. Clear with a bit of sediment in suspension. Pale, white gold with a bit of brass. Nose shows the Brett expressing tart, unripe pineapple, as cider character shows excellent tannin and attenuation alongside yeast and barrel. Don't get the gooseberries or the port on the nose. Juicy, soft, tannic but mellowed with gentle wood and soft port undertones. Dash of vanilla and pepper alongside mildly juicy apple, lightly tropical Brett and maybe an afterthought of tart gooseberry, though I'd never find it blind. An unusual mix, this Brett, Tawny Port and gooseberry, but it's exquisite.
