Schisandra berries, otherwise known as the five flavor fruit, have something to offer everyone and is a dynamic culinary delight, as it is the only fruit that is known to contain all the cornerstone tastes: sweet, salty, sour, pungent and bitter. Schisandra berries were macerated in apple wine with honey and beach plums, in the creation of this deliciously effervescent cyser. Aged for 1.5 years in barrels and then bottled with a sparkle that serves to lift and disperse the multi-flavors contained herein to dance playfully upon your pallet.

750mL bottled 2020, drunk 6/22/24. Slowly gushing, clear brass. Well-carbonated. Small, white head to ring. Beautiful nose. Tons of botanicals with a lightly acidic, herbal, floral schisandra and tons of mellow brett. Gentle, lightly malo-lactic apples and a bit of sticky honey. Clean with no alcohol or weird phenols. Bright and juicy with spicy phenolics/acidity from the berries. Lean, long brett with a good texture and medium body. Good attenuation. Tons more brett and berry lingering. Refreshing and pretty light with big, bold flavors.
