Barley Wine aged in Bourbon Barrels

Over the years, Paragon has become one of our flagship beers. What makes our barley wine special is that it is always brewed with the exact same recipe, but each edition is unique due to a number of factors, barrel types and environmental factors to say it briefly. In 2023, we used fresh, high-char Jim Beam barrels in which the beer matured for one year. We think the result is pretty awesome and can best be described as a Kentucky hug. Enjoy – it’s a great year for Paragon.

13.11.2024, tap @ Vinyl Bar:
Flat, hazy brownish dark amber color. Aroma is slightly sweet sour-ish boozy, caramel malts, salty licorice, dark sugar, raisins, bourbon, old rope, toffee, oak, nuts, almond essence. Taste is slightly dry sour-ish roasted, bark, bourbon, fruit stones, old rope, caramel malts, almond essence, oak, salty licorice, toast, knekk, raisins, soil. Medium to longlasting bitterness, slightly harsh sour-ish boozy mouthfeel. Fair enough, but not up to levels with previous vintages.
